Lindisfarne Oysters with Asian Dressing

 

Oysters are one of those things that you either love or hate. Every should give them a try and this slightly sharp, sweet and spicy dressing works really well. Also you will need a minimum of 6 oysters per person. A little tip if you’re trying them for the first time you’ll find it easier to open the ones where you can clearly see the hinge where you push the knife in to open them.

 

You will need:

6 Oysters per person

For the dressing:

2 tsp Finely chopped coriander stalks

5 tbs Light soy

1 tbs Fish sauce

Juice of 1 lime

1/2 Inch grated ginger

1 Red chilli finely diced

1/2 tsp Palm Sugar

 

1. Mix all the dressing ingredients in a bowl saving the coriander stalks to finish the Oysters.

2. Carefully insert your knife in to the hinge of the oyster then as it begins to open run the knife along the flat side of the shell. Once the shell is open then run the knife under the oyster to release it. Turn the oyster over and place back in the shell.

3. Spoon over 1 tsp of the dressing per oyster then sprinkle over a little of the coriander stalks.
