Pad Ga Prao

If you’re a fan of Thai food but only really made red and green curries at home then this recipe is one to try. It’s dead easy to make, really tasty and super spicy. This recipe will serve 3-4. You can serve with plain rice or lettuce cups.

 

You will need:

600g Pork Mince

30g Thai Basil

200g Fine Beans

1 Egg Per person

6 Thai Red Chillies (use less if you don’t want it too spicy)

4 Large Garlic Cloves

 

For the sauce:

3 tbs Dark Soy

3 tbs Light Soy

2 tbs Oyster Sauce

1 tbs Fish Sauce

1 tbs Kicap Manis (you can get this in most supermarkets in the world food aisle)

1 tbs Palm Sugar

 

 

  1. Combine all of the sauce ingredients in a bowl and set aside until ready.
  2. Finely slice the chillies and garlic and gently fry in a little oil until softened. Turn the heat up and add the mince to the pan. As the mince begins to brown pour off a little of the fat that has been released. You need the mince to start to catch and turn golden brown before adding in the beans, sauce and basil leaves. Continue to cook for around 5 minutes so the beans become tender but not mushy. Season with a little salt and pepper before you cook the egg.
  3. Traditionally the fried egg is crispy but cook it exactly how you like it.
  4. To seve place the Pad Ga Prao in the bottom of the bowl and top with the egg. Finally scatter over some fresh red chillies and serve.
