Bywell Smokery Smoked Duck

Im a fan of what they are doing at Vallum farm, swiftly becoming a real foodie destination. One particular jewel is Bernard Lynch’s smokery. Named in the UK top 5 by The Daily Telegraph recently, his meat, fish and game is smoked traditionally and to perfection. Dont get me wrong everything he produces is superb but i absolutely love his smoked duck. Not too heavily smoked so as to lose the integrity of the meat and just has the most amazing melting mouthfeel! Brilliant in salads, as part of anti pasti or as i used it in a risotto.
