Swallowfish’s Superb Smoked Salmon

We can all be a bit snobby about food and occasionally lose sight of the fact that in any cooking the real star ought to be the quality of the produce involved. I picked this up from the brilliant Swallowfish in Seahouses today. If you are lucky enough to visit there heres a little thing to try out! Right next door to the shop is the 200 year old tar covered smokery. Ask to have a little look in there…. Take a goooood sniff… The smell is epic! Ok now.. Pop back in the shop and buy yourself some smoked salmon (or any of the brilliant products they sell) but for the purpose of this exercise buy the salmon… Ok youre home..Open the packet…let breathe for a couple of minutes then squeeze a drop or 2 of lemon and a couple of grinds of pepper….. Close your eyes as you taste the salmon… Its a fact that your sense of smell is the most powerful in terms of memory recall…. You will never forget the taste of this salmon or the smell of that smokery for the rest of your life!
