Asian Crab Cakes

Ok I promise that this is the last crumbed thing that I do but I picked up some crab claws the other day and some great Kwans Kitchen Hot Salt and Pepper Spice so I thought id make these.

Ingredients

2 Crab Claws
2 Medium Potatoes
Spring Onions
1 tsp Mayo
1/4 Red Chilli
1/2 Clove of Garlic
Kwans Kitchen Hot Salt and Pepper Spice
Egg
Plain Flour
Panko Breadcrumbs
Lemon Juice
Curly Parsley

With the back of a carving knife crack the claws and use the handle of a teaspoon to scrape out all the meat. Be carefull there are little bits of white cartilage inside and of course you dont want the shell either. Finely chop the 1/4 red chilli, finely slice 2 spring onions, 1/2 garlic clove, few leaves of parsley and place in a bowl with the crab. Squeeze in a few drops of lemon and add a pinch of Kwans Kitchen Hot Salt and Pepper Seasoning.

Peel and boil your potatoes. Once done mash really well leaving no lumps at all. Add the mayo and a pinch of Kwans Kitchen Seasoning. Let the potato cool then add in the crab mixture.

Shape the mixture in to balls then crumb by rolling in flour then egg then breadcrumbs. Youll only need to do this once. Deep fry until golden. Let them drain on kitchen paper for a couple of minutes and season again with the Kwans Kitchen Seasoning.

For the chilli mayo just combine 3 parts good quality mayo to 1 part sweet chilli and a good pinch of Kwans Kitchen chilli salt.
