Best Steak Sarnie!!!

There are few things in life better than a great sarnie…. We all have our favourite! I always wanted to do an experiment… Get someone to tell me their ultimate sandwich then take them out drinking all day and get them to make it at night and see how it compared… Probably loaded with cheese, bacon, chips, donner meat and god knows what else. Anyway this is my ultimate steak sandwich. Give it a go!

 

Fillet Steak

Ciabatta

Stilton

Pancetta

Rocket

8 Tomatoes

Jar of Roasted Red Peppers

5 Cloves of Garlic

3 Banana Shallots

1 Large Onion

Balsamic Glaze

Beef Dripping

Olive Oil

Milk

Plain Flour

Butter

Wood chips

 

1. Cut the tomatoes in half and sprinkle with sea salt a little black pepper. Add 6 cloves of garlic and drizzle with olive oil.

2. You can buy wood chips from most supermarkets. Take a couple of handfulls and make a tin foil envelope and pierce the top several times.

3. Put the oven on high 220 degrees and place the wood chips on the bottom of the oven for 15 minutes. Turn the oven down to 140 then cook the tomatoes for 40 minutes.

4. Fry off 1/2 a whole onion in olive oil until browned.

5. Once cooked take the tomatoes and 2 whole roasted red peppers and blitz in a food processor with the onion and garlic and 1 tbs of balsamic glaze. Season with salt and pepper. Put back in the pan and reduce until the sauce is nice and thick. Leave to one side while you prepare the steak and cheese sauce.

6. Take the fillet steak and season well with salt and cracked black pepper. Sear in a red hot pan for 2 minutes each side then cook in the oven for another 5 minutes for a medium rare finish. Leave to rest fo 5 minutes.

 

For the cheese sauce:

1. Take 2 tbs of butter and the same of plain flour and combine in a hot saucepan to make a roux. Add milk until the consistency is like double cream. Add some stilton and stir. Season with a little white pepper.

Crispy Onions.

1. Slice 3 Banana Shallots and Fry in 1 cm of oil until crispy. Take out and dry on kitchen paper.

Pancetta.

1. Fry 6 Slices in olive oil until crispy. Drain on kitchen paper.

Ciabatta.

1. Cut in half then fry in a little beef dripping. Once done rub over 1/2 a garlic clove.

Rocket.

1. Dress with Olive Oil and Balsamic Glace and a pinch of salt

 

Finally……………..

 

Assemble the sandwich.

1. Slice the steak

2. Smear over the tomato sauce on the bottom of the ciabatta. Then the steak with any cooking juices. Pour over the cheese sauce then the crispy onions. Finally the rocket.
