C9 Day 9: Rare Asian Beef with a Warm Noodle Salad

Day 9 on the C9.. Get in there it’s done and dusted. I thought i’d end the diet with a little bit of a treat. It is still under 500 calories at 465. It is entirely up to you how you have your steak but for this recipe I like it really quite rare.

 

You will need:

140g Fillet Steak

2 Baby Peppers

1/2 Head Pac Choi

50g Rice Noodles

1 Spring Onion

Sesame Seeds

Cress

1/2 Chilli

Fresh Thai Basil and Coriander

 

For the dressing:

6 tbs Light Soy

1 tbs Sesame Oil

Juice of 1 Lime

1 tsp Clear Honey

1/2 tsp Grated Ginger

1/2 tsp Red Chilli

Black Pepper

1. Combine in one bowl, stir well and leave to one side while you prepare the vegetable and noodles.

 

1. Firstly marinade the steak in 2 tbs of dark soy, 1 tsp sesame oil and 1/2 tsp of szechuan pepper. Leave for about 30 minutes but the longer the better.

2. Cook your noodles then once done immediately put in to very cold water to stop them cooking.

3. Get your frying pan smoking hot and cook the steak for a couple of minutes each side for rare beef. Once cooked place to one side to rest.

4. Once you have all your vegetables chopped get your wok nice and hot adding in 1 tsp of sunflower oil. Drop in the vegetables and cook for 1 minute before adding in your noodles and 4 tbs of your dressing. For the final 30 seconds all a few coriander and basil leaves.

5. Calve your steak and arrange on top of the noodles. Finally top with a few sesame seeds and a little peppery cress.
