Day 7 C9: Orzo with Basil Pesto, Shredded Ham Hock and Roasted Cherry Tomatoes

You will need:
120g Orzo
80g Pre Cooked Shredded Ham Hock
60g Fresh Basil
1 Large Garlic Clove
1 tbs Grated Parmesan
1 tbs of Toasted Pine Nuts
4 Roasted Cherry Tomatoes
5 tbs Olive Oil
Salt and Pepper
Pea-Shoots for Dressing
For the Pesto:
1. In a blender add the basil, garlic, olive oil, parmesan and a little salt and pepper. Blend until smooth and a sort of mint sauce consistency.
1. Cut the tomatoes in half and sprinkle over a little salt then cook in the oven for about 15 minutes at 160 degrees.
2. Cook the Orzo then drain. Stir in the ham hock and 2 tbs of Pesto while the Orzo is still hot.
3. Arrange in the dish and top with the tomtoes, pea-shoots and a few twists of black pepper.
