Day 8 C9. Hot Smoked Salmon with Quails Egg and Lemon and Horseradish Creme Fraiche

Here we are on day 8 of the C9. To be honest i’d eat this any time of the year. Hot smoked salmon is available in most supermarkets but I bought this from Seaview Fisheries in North Shields. If you get the chance to go there please please do! Its much cheaper than the supermarket and the quality is so much better. This recipe comes in at 362 calories.

 

You will need:

100g Hot Smoked Salmon

50g Peashoot and Baby Leaf Salad (tesco)

Cucumber

3 tbs Half Fat Creme Fraiche

1 level tsp Horseradish Sauce

1 Lemon

2 Quails Eggs

 

1. Boil the eggs for 1 minute 30 then place in cold water straight away. Peel and slice in half.

2. To make the dressing mix 3 tbs of half fat creme fraiche with the juice of half a lemon, horseradish and a pinch of salt and pepper.

3. Using a potato peeler cut 4 or 5 long ribbons of cucumber then add to the leaves and dress with 1 tbs of Olive Oil and a few drops of lemon juice.

4. Gently break the fish apart so you have decent size pieces.

5. Arrange the salad in the dish then top with salmon and the quails egg. Drizzle over the dressing and a few twists of black
