Fillet Steak with Salsa Verde and Roasted Shallots
Posted on in Beef, Lamb & Pork, European, RecipesIf you’re a bit bored of peppercorn sauce with your steak this is something different but 100% worth a go. You can cook whatever steak you want and however you want but this is a fish sauce that works really well.
You will need
Bunch of Parsley (handful)
Bunch of Mint (handful)
Bunch of Basil (handful)
2 Garlic Cloves
2 Anchovy Fillets
1 tsp Capers
1 tsp Gherkin
4 tbs Olive Oil
Squeeze of Lemon
Pinch of Pepper
Fillet Steak
Shallots
Whack it all in the blender and pulse a few times to break it all up but so it’s not totally smooth.
Cook your steak in a smoking pan. Season well with salt and pepper and fry both sides for 3 minutes. Add a knob of butter and the shallots continually basting the steak. Once cooked rest for 5 minutes.
Slice the steak then dress with the salsa verde and shallots. Drizzle over the pan juices and serve
