Mixed Pepper Tartare with Ginger Chilli and SesamePosted on in Low Calorie, Recipes, Vegetarian & Soups
Ive earlier done a tuna tartare but this vegetarian version is really fresh and a perfect summer dish or light lunch, packed full of flavour and very healthy.
For the Tartare
1/3 Red Pepper
1/3 Green Pepper
1/3 Orange Pepper
1/3 Yellow Pepper
1/5 Red Onion
1 spring Onion
Cress for topping.
For the dressing
1 medium-hot red chilli, finely chopped
2.5cm/1in piece fresh root ginger, peeled and grated, or finely diced
1 tbsp clear honey
6 tbsp light soy sauce
1 lime, juice only
2 tbsp sesame oil
1 tbsp sesame seeds, toasted
1.Finely chop all the ingredients and set aside in a bowl. Meanwhile prepare the dressing. Gently toast the sesame seeds in a dry pan for a couple of minutes, then add them to the dressing mix.
2. Add the dressing to the pepper mix and leave to marinade for 10 minutes.
3. Toast the Ciabatta and assemble on the plate.
