Oysters with a Mojito Dressing, Cucumber and Caviar

You will need.
6 Oysters per person
1 tbs Fresh Mint
1 Banana Shallot (finely diced)
1 tbs Cucumber (finely diced)
Juice of 4 Limes
2 tbs Rice Wine Vinegar
Pinch of Sugar
Caviar
1. Open your oysters carefully by pushing the knife in the hinge at the base and running the knife along the flat side of the oyster. Release from the cupped side also then flip the oyster over on to the presentation side.
2. Take all your Mojito dressing ingredients in a bowl and leave for 5 minutes to let the flavours develop and the acid to cook the onions.
3. Dress the oysters by placing some of the mix in the bottom of the shell then a little over the top. Finish with a little of the caviar.
Told you this wasn’t cooking!

Fab – these definitely remind me the oysters at a certain restaurant in Newcastle – you make it look very easy to recreate at home!
