Simple Spicy Paneer Jalfrezi

I cant pretend this is my recipe I wombled it from Maunika Gowardhan. She is a cracking Indian cook from the North East. You can check out her recipes on maunikagowardhan.co.uk i’ts well worth a look. This is dead easy I promise and will only take you about 15 minutes or so to cook. As usual I have tweaked things a little but for a simple dinner this is a cracker. This recipe is for one person 2 people. Serve it with some warm Chapattis.

 

You will need

350g Paneer

1 Green Pepper

2 Tomatoes (cut in to 1/8th)

2 Cloves of Garlic

1/2 Inch Ginger

1 Onion

1/2 tsp Tumeric

1 tsp Whole Cumin

1/2 tsp Yellow Mustard Seeds

1 tsp Coriander

1 tbs Fresh Chopped Coriander

1/2 tsp Chilli Powder

Juice of 1/2 a lemon

Salt and White Pepper

 

1. Heat a thick bottomed pan and add some sunflower oil.  Add 1 tsp of whole Cumin and and mustard seeds and fry for a minute then add the onions for 2 minutes until soft. Add the garlic then your 1/2 tsp tumeric, 1 tsp coriander and 1/2 tsp chilli powder. Cook for another minute then add the peppers and tomato and cook for another couple of minutes. Finally cut your paneer in to cubes and add the ginger and cook for another 3-4 minutes on a low-medium heat.  For the last minute add in the fresh coriander and the juice of 1/2 a lemon.

 

I told you it was easy!

Serve and eat with some warm Chapatti or Naan Breads.
