Spicy Noodle Soup with Crispy Prawn and Crab Balls

You can not eat this soup delicately! Head over the bowl and slurping up the noodles is the technique. Like the Ramen dish I did this is all about your personal preference. Once you have the broth made you can do what you like with it. I would suggest when your’e making the broth too that you keep tasting until you are totally happy, this might be more garlic, chilli, lime or any of the aromatics you want to add in. This will comfortably serve 2!

 

You will need to make this in a couple of stages as you need to let the prawn balls marinade for 30 minutes to an hour to let the flavours develop.

You will need.

360g Raw King Prawns (save 4 to dress the soup)

100g White Crab

1 Spring Onion

1/2 Garlic Clove

1/2 Red Chilli

1 tsp Sesame Oil

1 tbs Light Soy

Pinch of White Pepper

1 tbs Cornflour (plus 4-5 tbs for dusting)

1/2 tsp Chilli and Garlic Salt

6-7 Thai Basil Leaves

 

1. Put all your ingredients apart from the cornflour in a food processor and blitz until you form a course paste. You can do it until its smooth if you prefer.

2. Pop the mixture in the fridge to firm up for a minimum of 30 minutes.

3. In a deep fat frier or a pan if you don’t have one heat the oil on a medium/high around 170 degrees. Roll each of the balls in a little cornflour and tap off the excess. Fry in the oil for around 4 minutes. If your’e doing them in the frier they will float to the top once they are ready.

 

To make the broth you will need.

800g Dashi

2 Lemongrass Bruised

1 Clove of Garlic

1 Inch Ginger (sliced in to matchsticks)

1-2 Thai Chillies Split Lengthways

1 tsp Finely Chopped Coriander Stalks

1 tsp Sesame Oil

2 tbs Light Soy

1 tbs Fish Sauce

Juice of 1 Lime

Pinch of Salt

 

1. Just be gentle when making the broth. Add in all your ingredients to a pan and bring to a gentle simmer for about 30 minutes. Before you serve you will need to cook the rice noodles as per the instruction on the back then refresh them in very cold water to stop the cooking. Fish out the lemongrass then drop in the Sliced Spring Onions, Baby Pac-Choi, Sliced Red Chilli and 4 king Prawns for around 2 minutes.

 

To serve place the noodles in the bottom of the bowl then add the broth, vegetables and add then top with the prawn and crab balls. If you like you can add in a little few drops of chilli oil just to give a little extra kick.
