Vietnamese Pho Recipe
Posted on in Beef, Lamb & Pork, RecipesOK so this is a labour of love to say the least but its all about the stock! Take your time ok. Please give it your own twist but enjoy it because its very clean, healthy and intense youre going to enjoy it!!
Ingredients
For the stock
Pint of quality chicken stock
8 chicken wings
2 garlic cloves
Inch of chopped ginger
2 stalks of lemongrass
4 thai red chillies
3 tbs Thai fish sauce
3 tbs light Soy
2 spring onion chopped
Corriander Stalks
Water to fill large pot
If its not clear strain through a cheese cloth a few times intil completely clear. Keep tasting people and add more salt or fish sauce or whatever you feel it needs.
For the filling
Finely slice fillet steak
Small bunch of corriander
2 Chopped Thai Chillies
Finely slice 3 spring onions
Juice of 1 lime
2 heads of Pac Choi finely sliced
2 Packs of Amoy fine rice noodles
Ok heres the ticky bit. Squeeze the lime in to the stock. Then put your prefered mix of ingreients in a bowl and pour over the boiling stock…. Leave to infuse for a few mins then eat!!
