Lamb Koftas, Flat Breads, Tzaziki and Hot Roast Pepper Sauce.

This is a cracking tear and share dish with a few little cheats to make it a little easier to prepare. Its basically a posh kebab if i’m honest. As with a lot of things I make its perfect with a few beers. You can but the raw flat- bread dough in Tesco now and it will serve 3-4 people.

 

You will need

For the Koftas

500g Lamb Mince

3 Banana Shallots (finely diced)

2 Cloves Crushed Garlic

4 tsp Harissa Paste

1/4 tsp Cinnamon

1 Heaped tsp of Chopped Parsley

1 Heaped tsp of Chopped Coriander

1 Heaped tsp of Chopped Mint

Zest of 1/2 Lemon

1 Egg

Salt and Pepper

 

1. In a bowl add all your ingredients and get your hands involved and give it a good mix and mash about. Cover with cling-film and pop it in the fridge overnight. When you are ready to cook them ball them in to little mini rugby ball shapes a little smaller then a gold ball. Shallow fry on a medium heat until nice and golden on the outside but not dry in the middle.

 

To make the Ras El Hanout and Red Pepper Sauce

You will need.

1 Jar of Roasted Red Pepper (360g)

2 Cloves of Garlic

1 Banana Shallot

1 Red or Green Chilli

6 tbs Good Olive Oil

Juice 1/2 Lemon

1 tbs Tomato Puree

2 tbs Ras El Hanout

1 tbs Harissa Paste

1/2 tsp Cinnamon

 

1. Whack it all in a blender until its nice and smooth. You wont need all this sauce but it will keep in the fridge for a few days or you can freeze it. Before you serve it you will need to warm it though in a pan. It thickens up so you can add a little water if required.

 

Toppings for the Flat Bread

Griddled Courgette (cooked in a little oil nice long strips seasoned with salt)

Mixed Olives

Feta

Pickled Green Chillies

Mint, Coriander and Parsley

Drizzle of Olive Oil.

Cheats Tzaziki (4 tbs Greek Yoghurt, 1 tsp Mint Sauce, Pinch of Salt and Pepper)

 

Ok so time to cook then assemble.

1. Take the Koftas and fry in a little oil for about 8-10 minutes.

2. Take out your flat-bread and cook on a baking tray on the paper. Drizzle over some olive oil and a little sea salt.

3. Once the bread is done its time to plate. Its just a case of launching it all on. No need to be tidy at all. Place the koftas so everyone gets a few when they tear the bread then top with the olives, mint, coriander, Tzaziki, Red Pepper Sauce, Courgette, Feta and finally drizzle over olive oil.
