The Anti-Mac Burger
Posted on in Beef, Lamb & Pork, RecipesMini rant to start… MacDonalds are utterly woeful.. Shit meat, shit buns, no care and attention.. Im not a food snob but I believe you can eat at a Michelin Star restaurant or a burger joint and the same passion should go in to both.
Please give this a whirl and kick the living daylights out of the Golden Arches offering.
For the Burger
Brioche Buns
400g of Chuck Steak Mince
2 Banana Shallots finely diced
Salt and Cracked Black Pepper
To baste the burger. 2tbs tomato sauce and 1tbs of American Mustard
To top the burger
Slice of Smoked Chilli Cheese
Pickled Red Onion (You do this by slicing 1 red onion and pouring over 5 tbs of Rice wine Vinegar)
4 Slices of Sliced Smoked Bacon
Beef dripping to toast the buns.
1. Finely chop the shallot and add to the mince in a bowl and then season with a good pinch of sea salt and a good few grinds of black pepper. Give the mince a good squish up in your hands then leave in the fridge covered in clingfilm while you prepare everything else.
Burger Sauce
3 tbs of Mayonnaise
1 tbs Tomato Sauce
Splash of Worcester Sauce
Few Drops of Chipotle Tabasco
Pinch of Smoked Paprika
2 Babygem Lettuce
1. Combine all the sauces and finely chop the lettuce.
Build your burger
1. Ok so youv’e made your sauce, shredded your lettuce.
2. Form your mince in to balls then squash in to the burger shape.
3. If you’ve got a griddle pan use that but a frying pan will do just fine. Get it smoking hot and fry in a little oil. Once you have the burger in baste the top-side in the tomato and mustard.
4. While you are doing this fry off your bacon in another pan until crispy.
5. Take out the bacon, wipe the pan clean and drop in your beef dripping.
6.Turn the burger and bast the other side with the mustard and tomato. (each side should take a couple of minutes)
7. Toast your buns for about 30 seconds
8. Drop a little water in to the pan with the burger. Top with your cheese and cover with a pan lid to steam for 30 seconds.
9. Time to assemble. On the base spoon in your lettuce and burger sauce mix, next the bun and then the smoked bacon. Finally add the pickled onion.
10….. Enjoy its absolutely epic!!
