Vietnamese Spicy Noodle Soup with Prawn and Pork Dumplings
Posted on in Asian, Fish & Seafood, Recipes, Vegetarian & SoupsWell i’ve been cursed with a stinker of a cold so i’ve made this great Vietnamese fresh and spicy soup to try and alleviate some of the stuffiness! If you cant be bothered to do the dumplings, chicken will work or if your’e feeling fancy try some thinly sliced fillet steak dropped in to the hot broth and poached.
For the Broth
1.5lt Good Chicken Stock (you can use bouillon if you cant be bothered)
1 Clove of Garlic
1 Inch of very finely sliced ginger
1/2 very thinly sliced red chilli
1 tbs Light Soy
1 tbs Fish Sauce
5 Stalks of Coriander
Juice of 1.2 a lime
1 head of Pac Choi
2 Spring Onions
Mint Leaves
Fresh Corriander
Finely Sliced Chives
Egg Noodles
1tbs of Sesame Oil.
For the Dumplings
500g Pork Mince
200g Raw King Prawns (Roughly chopped)
1/2 Red Chilli
1/2 Inch finely chopped Ginger
1tbs Finely Chopped Chives
1tbs Light Soy
1tbs Fish Sauce
Pinch of White Pepper
Ok make the dumplings first as they need to sit in the fridge for a while to allow the flavours to infuse.
1. Chop up your praws but not too finely as you want to have a little texture to the dumplings.
2. Add all the ingredients to a bowl and get your hands in there and squish it up!
3. Form ping-pong sized balls and pop in to the fridge covered in clingfilm.
1. To make the broth pour your chicken stock in to a large pan and bring to the simmer. Add a whole garlic clove just gently bashed. Add your ginger and chilli along with the Coriander stalks, Soy, Lime and fish sauce. Then season with a little white pepper.
2. Leave the soup to gently simmer for about 2 minutes to allow all the flavours to develop. Once done fish out the coriander and garlic clove.
Next to steam your pork and prawn dumplings. This will take about 3-4 minutes in an electric steamer.
Ok now to assemble. Take your Pac Choi, chop off the base and drop in to the broth together with some finely chopped chives, spring onions and a few mint and coriander leaves.
In another pan cook your egg noodles as per the instructions. Drain and set aside.
Drop your dumplings in to the bowl with some of your noodles and then pour over the broth.
You might want to add a little more fresh lime at this point or some more chilli.
